Last night, I took my first stab at cooking beets, and I’m happy to report that I don’t hate beets. I was afraid I might. The only beets I can remember eating came out of a can at my grandma’s house. I did not like those beets.
I decided to keep it simple and roast the beets with some carrots and onions. They took quite a while to cook – about an hour and half. I’ll admit, I didn’t enjoy the beets as much as the carrots, but I did like them.
The best part of the beets was the greens. I used this recipe (minus the bacon), and they were delicious. A little sweet, a little tangy and a little spicy. Yum.
I also attempted to make pork chops for the first time. This did not go so well. And that’s why I write about vegetables.
