
My first attempt at hard boiled eggs, and subsequent deviled eggs, was a success. This method produced perfectly hard boiled eggs, as promised.
For the deviled eggs, I used this recipe from Epicurious, which includes diced celery, capers and tarragon. I didn’t have a shallot, so I used about a teaspoon of onion powder. I was afraid diced onion might be overpowering.
The finished eggs garnered comments such as, “Mmm, what is that herb?” and “These are nice and hardy.” So, I’d consider that a success. Plus, I think the celery garnishes ended up looking like little bunny ears. And what’s more cute than bunny ears?
