Radish Salad with Parsley and Feta

The big, pretty bunch of radishes I picked up at the farmer’s market last week were slated to be made into a creamy dip, as was a block of feta cheese and a bunch of parsley. But with a fridge overflowing with cheese and hot, sticky weather draining my will to live, let alone cook, I opted for a simple, light salad instead.

The salad made a refreshing side dish and took less than five minutes to put together. It was definitely one of those on-the-fly dishes, but just for kicks, here’s the recipe:

  • 5-6 large radishes, sliced
  • 2 tablespoons of parsley, roughly chopped
  • 2 tablespoons feta cheese, crumbled
  • juice of 1/2 lemon, or to taste
  • drizzle of olive oil
  • salt and pepper

Mix the radish slices and parsley together. Drizzle with lemon juice and olive oil. Top with salt and pepper and feta. Serves 2 as a small side.
